Cause of lingering smell on your hands after touching a beetle

I'm obviously not smart enough to be an entomologist, but I'm very interested in the field, and I was hoping someone could point me to where to research this. Or actually answer it I guess. I tend to grab-and-throw the poor bugs in panic so have no idea of species or w/ever. I just know they stink and I have to wash my hands 2+ times!

I'm specifically talking about beetles in southern Arizona, but I don't think location really matters? Let me know if you need clarification, as I don't really understand entomology, I am so sorry! Thanks for reading my question, have a great day.

Is this smell a defense mechanism or like oil protecting the beetle or something?
